Cream of Broccoli soup

Ingredients:
  • Broccoli crowns - 1 bunch, chopped
  • Potato - 1 medium sized,finely chopped
  • Onion - 1, finely chopped
  • Celery - 2 stalks, chopped
  • Milk - 1 cup
  • Butter - 2 tbsp
  • oil - 1 tbsp
  • Salt
  • Pepper


How to make it:

Heat oil and butter in a pan,add onions and fry until golden brown. Now add the potatoes, broccoli and celery and cook until done. Let it cool. Grind in a blender until smooth by adding milk. Transfer to the pan, add salt and bring it to a boil. Add crushed black pepper according to taste. Serve hot!


Easy Pizza

Ingredients:

  • Burger Buns - 2 slices
  • Marinara sauce - 1/2 cup
  • Toppings - onions, jalapenos, green peppers
  • Mozzarella cheese - 2/3 cup


How to make it:

Marinara sauce: Its a simple version of marinara sauce and can be prepared in just few minutes. Heat oil in a pan, add finely chopped onions and fry until golden brown. Add 3 tbsp tomato paste and little water. Add salt,oregano, basil and thyme leaves and cook until thick( Or use the ready made sauce available in the stores). Grease a baking sheet and arrange the burger buns. Add marinara sauce over the buns. Add cheese and desired toppings and bake at 350 degrees Fahrenheit until the cheese melts completely. Hmmmmm.... tastes good! My kid love these instant pizzas!

Yesterday, It was a thrilling match between New York Giants and Green Bay Packers. Giants had a wonderful victory over Packers. Though, it was so disappointing when Tynes could not make two of the field goal attempts, he bought a winning celebration to the Giants in OT by attempting a 47-yard field goal. The Super bowl XLII is to be played by New York Giants and New England Patriots in Arizona on Feb 3rd 2008.


It was a lazy evening and i sat before the TV watching NFL and the Australian Open Tennis. I don't want to miss all these matches going on.... also did not want to cook at home. Its a better choice to stock up food before the match begins or take a very less time cooking or just order some pizza's from store.


Whats for munching during the match? Obviously, its some chips and salsa. But too much of chips is not good and it adds lotta carbs. I don't want to spend much time in the kitchen baking or frying a snack item. Whats for snack then? Got an idea! my easy Puffed Rice Snack recipe will make a good treat. The best part about that recipe is... it takes just few minutes to make this healthy, tasty evening snack. I am sending this recipe to Mansi of Fun and Food for "Game Night Party" event. Hot garlic pickle ! This is my entry for Think spice.... Think Garlic event hosted by Sunita of Sunita's world.




Ingredients:

  • Garlic Cloves - 1 cup
  • Corriander seeds - 1/4 cup
  • Jeera - 1 tbsp
  • Fenugreek seeds - 2 tbsp
  • Long red chillies - 8
  • Lemon juice - 1/4 cup
  • Salt - as required
  • Gingelly oil - up to 1/2 cup
  • Curry leaves - few


How to make it:

Dry roast (without oil) corriander seeds, jeera, fenugreek seeds and curry leaves. Heat little oil and roast the red chillies. Grind all these into a fine powder. Chop garlic cloves length-wise if they are too big. Heat 1/4 cup oil, add garlic cloves and fry for a while. Now add the ground powder, salt and lemon juice and cook until it thickens. Add more oil as the pickle thickens and cook for few more minutes. Let it cool and preserve in glass bottles.

Sakkarai Pongal

Ingredients:
  • Rice - 3/4 cup
  • Moong dhal - 4 tbsp
  • Channa dhal - 1 tbsp
  • Jaggery - 1 cup
  • Shredded Coconut - 2 tbsp
  • Cardamom - 4
  • Ghee - 1/2 cup
  • Cashew nuts - few


How to make it:

Cook rice, moong dhal and channa dhal together in an open pan with 3 cups water until done. Now add the jaggery and stir until it thickens. Add ghee little by little while stirring to avoid rice sticking to the pan. Add cardamom powder and coconut. Fry cashews until golden brown in ghee and add it to the pongal. Serve hot!

Recently, we went to a Chinese restaurant and being a vegetarian we had only few options. Out of which, this Buddhist Delight was so tasty and wonderful. I never had such a combination of vegetables in soy sauce before. The great taste of that recipe made me try at home... Also i am sending this recipe along with Vegetable Lo Mein recipe to this month's WBB - Soy and its by-products hosted by Rajitha of Hunger Pangs . Thanks Rajitha for hosting this event with such a wonderful theme.

Buddhist Delight:

Ingredients:
  • Carrots - 1/4 cup sliced
  • Broccoli crowns - 1/4 cup sliced
  • Beans - 1/4 cup sliced
  • Mushrooms - 1/4 cup sliced ( if preferred)
  • Celery - 1/4 cup sliced
  • Snow peas - 1/4 cup sliced
  • Tofu - 1/2 cup sliced
  • Green Peppers - 1/4 cup sliced
  • Green Onions - 1/4 cup finely chopped
  • Vegetable Broth - 2 1/2 cups
  • Soy Sauce - 1/4 cup
  • Salt - as required
  • Sugar - 1/2 tsp
  • Red peppers - 2
  • Garlic - 4 cloves
  • Corn Flour - 1 tsp


How to make it:

Vegetable broth:

Just try the ready to use vegetable broth available in soups section of grocery stores. I did not have packaged vegetable broth in hand so i made it at home. Herez how i made ... Boil all the vegetables except onion in 4 cups water and cook until half done in a low flame. Separate water from vegetables, add a tablespoon of tomato paste to it and mix it well.

Crush garlic cloves and red peppers into a powder. Drain water from tofu and fry it in oil and keep aside. Heat oil in a pan, add green onions and fry for a while. Add the crushed red peppers and garlic and saute until the raw smell of garlic is gone. Now add the vegetable broth and soy sauce and bring it to a boil. Add the vegetables to it and let it boil until the vegetables are fully cooked. Add fried tofu, salt and sugar. Mix the corn flour in 2 tsp water and add it to the vegetables and cook until the gravy thickens. Serve hot with rice.


Vegetable Lo Mein:

Ingredients:

  • Noodles - 1 small packet
  • Vegetable broth - 1/2 cup
  • Soy sauce - 4 tbsp
  • Beans - 1/4 cup sliced length wise
  • Carrots - 1/4 cup sliced length wise
  • Green Peppers - 1/4 cup sliced
  • Mushrooms - 1/4 cup (if preferred)
  • Green Onions - 1/4 cup finely chopped
  • Garlic - 2 cloves finely chopped
  • Crushed red peppers - as per taste
  • Salt - as required


How to make it:

Cook noodles as per packet instructions and set aside. Heat oil in a large pan, add the green onions and garlic and fry for a while. Then add the vegetables and fry until the vegetables are cooked. Add salt, crushed red peppers, vegetable broth and soy sauce and cook covered for few minutes. Now mix corn flour with little water and add it to the vegetables. Now add the cooked noodles and mix it thoroughly. Serve hot with herbal tea.
